* I have discovered that "healthy" videos can be very controversial on YouTube, so here are my two cents: a "bad" meal will not make you fat. And a "healthy" meal will not make you lose weight. There is no right way or wrong way to eat. While you are feeding and maintaining your body, you will be doing something right. I'm not here to tell you that, because you like fast foods and cookies, you're not healthy or you're wrong, nor am I here to praise you for being a gluten-free raw food specialist. You make yourself eat what makes you feel happy and healthy, turn around what everyone else is doing! I ate the way I ate because it makes me feel healthy and happy. In this video, I show you 3 of MY favorite things to have lunch, but feel free to substitute what you like the most!
A little about my diet. When I was 17 years old I received a prolonged case of monkey that caused a violent illness after everything I ate or drank. After almost a year of not being able to retain any food, I had lost around 30 pounds and, despite improving with the monkey, my gut was permanently damaged. As shown by an endoscopy, the lining of my stomach and esophagus broke into pieces and I was diagnosed with non-ulcer dyspepsia. From there, my doctor, my nutritionist and I realized that dairy products, cereals and high-fat foods were causing my digestive problems and pain. I have been free of dairy since I was diagnosed with an allergy more than 3 years ago and I have not had any grains since last January. I listen to my body and stay away from the foods that revolt my stomach and digestion, hoping that eventually I can heal myself completely and reintroduce dairy products and cereals into my diet. If you are thinking about experiencing a change in your lifestyle with regard to your diet, consult your doctor so they can work out a plan together.

Mason jar salad:
2 tablespoons of your favorite salad dressing (I used balsamic vinegar)
1/4 of a chopped cucumber
1 handful of shaved carrots
2 chopped beets
1/4 cup of chopped crimini mushrooms
A few pieces of red onion.
1/2 cup of cherry tomatoes cut in half
1/2 cup cooked red quinoa (feel free of sub for any protein)
Fill the rest with your favorite greens! (I used kale, chard and spinach)
Corn and Beans Salad
1/2 cup of black beans, rinsed and drained
1/2 cup chickpeas, rinsed and drained
1 cup cooked organic corn (look for free GMO!)
1 hand full of red pepper cut in cubes
1 hand full of red onion cut in cubes
1 hand full of cherry tomatoes in half
Cilantro to taste (obviously I like it a lot haha)
Juice of 1/2 of lime
And a splash of balsamic vinegar!
Greek Hummus Wrap
1 wrapping of your choice (omelette, pita, whole wheat, rice, coconut, etc.)
2 tablespoons of Hummus (I like Trader Joe's organic original)
1 hand full of chopped romaine lettuce
1 hand full of cherry tomatoes in half
A little thin sliced red onion
And a few kalamata olives in half!
